Day Two Hundred and Fifty-Six - Now I's Just Like Britney Spears

Ages ago [March to be specific] fellow thing-a-dayer Jen S. made some delicious looking red velvet cupcakes. Mmmmm - cupcakes. I thought - I should make those as I have never had red velvet cake of any type, although I was familiar with it. I believe that it is most popular in the southern US and Britney Spears served it @ her very classy wedding to K-Fed. I had no clue what it might taste like, but I plunged right ahead and tonight I made red velvet cupcakes. This is actually the first time that I have ever made cupcakes, despite the fact that I do love them dearly [I don't have any recipes for low-fat cupcakes]. Also, it's the first time I've used a recipe from a "real person" [meaning that I've ganked recipes from the internets before and I'm assuming that real people put them up, but I don't know them in any fashion - I feel like I know Jen a bit since I do read her blog daily]. So, I will let my dear readers be the judge of how the cupcakes turned out [the frosting was added later].



May I point out the obvious? They aren't red!?! Okay, I admit I didn't add as much red food colouring as the recipe suggested. That's kinda part of my problem with baking - the recipes aren't just suggestions...you should really do exactly what they say - or else. And yet, I wished I had photographed them going into the oven because they were totally red then [and almost hot pink before I finished adding all the dry ingredients]. However, they taste exceptionally delicious, so I guess they are forgiven for not being deliciously red.

Yay for cupcakes! I'm glad they turned out well. :) What kind of frosting did you end up using?

They look good (although I could judge better if I could taste them :) ).

I also believe recipes are just suggestions - probably from attempting to get recipes from my mom & grandma who have recipes like "add water until it's the right consistency".

For frosting I used a whipped vanilla that I bought @ the store. I don't like baking enough to make my own frosting, sadly. But thank you for the recipe!

I've never done a recipe from a "real person" as my family doesn't cook or bake. I prefer cooking so you can really improvise there...with baking you totally have to obey the rules.
