Okay, so I like soup. A lot. I could eat it everyday and twice on Sundays. I love making soup because it always turns out right. It can be endlessly changed and pureed or served cold - it's always excellent. I'm always a bit sad when the weather turns warm as I can't make soup without people thinking I'm crazy. So, it's a little surprising that there are forms of soup I haven't made yet.
Tonight I visited a restaurant favourite - in the safety of my own home as I made a bisque. Although bisque is traditionally made with pureed crustaceans - the ones that are too imperfect to be sent to market, to be precise - I made mine with three different kinds of mushrooms. Button, portobello, shiitake - I also love all types of mushrooms, although I do not like tinned or otherwise processed mushroom soup. A bisque is a deceptively simple soup with a rich and complex flavour. I used leeks and shallots to form the flavour base and then added fresh tarragon, the juice of one lemon and a good amount of sherry right @ the end to brighten up the creamy...cream flavour. Delicious!

I most definitely do not like mushrooms, but, for some reason, this soup of yours sounds delicious!
